Sometimes, Nothing Beats a Burger
Nothing compares to a delicious burger. Their fatty richness and charred flesh are perfectly balanced. When you combine energy-sustaining bread with crisp lettuce, tomato, and onion, you get the ideal meal. You can then garnish them with your preferred cheese, bacon, or condiments. In fact, it is a cuisine of the people, a truly democratic food. Burgers are a fantastic way to use different protein sources besides the usual beef. Fattier meats like lamb and pork also make excellent burgers, as do tuna, salmon, turkey, and chicken. I like to serve them naked on a salad or just with sides to keep my carbs down.
Variety Is Wonderful
Beyond the bun, too, there is life. Burgers can be the focal point of both a sophisticated and more casual meal. Ground meat is paired well with ethnic flavors. Try Mexican flavors with beef, Middle Eastern with lamb, Caribbean with cumin and pork, and Asian with fish and chicken burgers. Your family and friends will be thrilled when you add large handfuls of coarsely chopped herbs to any ground meat. Make your own burger mix. Put them on a sizzling grill and enjoy yourself.

“Several years ago, I got several of my farmers and suppliers together to prepare a luncheon on Washington, D.C.’s Federal Hill in honor of Indiana Senator Richard Lugar. We served Local Bison, rubbed with our Columbus Cowboy Espresso Chili Bend (available at the webstore) Rubbed Bison with Tailgate Catsup and Hard-Working Mustard,” says Chef Daniel Orr. “We got such great feedback on these burgers we had to put them on the restaurant’s lunch menu.”

Non-stick spray

Spray the bison burgers lightly on both sides with non-stick spray and season with spice blend. Do not be shy and be afraid of flavor. Cook one and taste it in advance to check seasoning. Adjust as needed. Grill to medium rare and serve. Do not overcook bison. It is very lean and will dry and be crumply if cooked too much.
