Chef Daniel Orr has a passion for spices. Here’s a blend of his own, and why he thinks they’re so crucial.

Intriguing Taste

Spices give your food a unique flavor. Their intrigue makes them memorable. The majority have names as exotic as the spices themselves and come from distant regions. Discover more about its origins online if you're a flavor enthusiast. You'll likely enjoy the local cuisine and be motivated to employ that spice in future recipes.


The World of Blending

Blends reduce salt in most situations and provide taste without adding calories. When these blends are prepared and stored in sealed containers away from direct sunlight, they will remain at their best for one to two months. Daniel enjoys using a coffee grinder for blending, but unless you want your coffee to taste like chai, you won't want to use it for coffee again after using it for spices.


Spices Are Characters All Their Own

These spices are versatile and work well with almost anything. They don't discriminate. They are not unique to any one dish or recipe. Try surprising your loved ones by preparing the same grilled fish or chicken every day for a week and using a different spice blend each night to make it taste different and fresh every night. Using them is as easy as brushing the meat or vegetable with a little olive oil, then liberally applying the blend and cooking. After cooking is finished, garnish with sea salt, a squeeze of citrus, and a drizzle of a little extra olive oil. Serve with vegetables for a nutritious dinner.


Aux Poivres

The following blend—Aux Poivres—might be an inspiration for you, but can use spice blends any way you wish:

Ingredients:

2 T cracked black pepper

2 T cracked white pepper

2 T Chinese Szechuan pepper

3 T fennel seeds

4 T coriander seeds

2 T guinea pepper

1 tsp crushed red pepper flakes

Procedure:

Coarsely crack all the peppercorns and spices separately and combine the red pepper flakes. Store in an airtight container in a cool, dry place.
