Supper vs Dinner
The French term soupe is where the word "supper" originates. In the rural south, a meal of beans cooked over a slow fire with fatback and whatever vegetables were left over is typically served for supper. You had dinner with that and some cornbread. Dinner and supper are distinguished by the formality of the occasion; dinner takes place in the dining room, while supper takes place in the kitchen. Since "supper" is an enjoyable meal with family and friends that should be enjoyed without pretense or grandeur, it is ideal for most of us.
The Philosophy Behind Rendering It
Good cooking begins with making the effort to find healthy, locally sourced products. Becoming a good shopper is 90% of becoming a great cook, and 10% is not ruining what you have found. After deciding on a protein, such as tofu or turkey, you season your food with your own unique flair and personality in addition to spices.
Pan-roasted or Grilled Marinated Pork Chop with Sorghum and Bourbon
8 14 oz center-cut pork chops with bone
1 C sorghum
½ C bourbon
½ C vinegar
1 minced medium onion
2 T minced garlic
2 T minced ginger
Juice of 4 limes
3 T butter
Salt and pepper
Make the marinade by combining sorghum, bourbon, vinegar, onion, garlic, ginger, and lime. Season with salt and pepper. Pour half of the marinade over the pork and allow it to sit at least 2-3 hours. Remove and pat dry. Brush with a little olive oil and season with salt and pepper. Reserve leftover marinade. Sear in a hot pan until caramelized Place pan in a hot oven for 10-15 minutes. Remove and test cooking. The thermometer should read 145 degrees at the thickest point toward the bone. Allow meat to rest on a plate in a warm area and deglaze pan with all the remaining marinade. Reduce and finish until rich and slightly syrupy. Add butter and swirl in. Season to taste with salt and pepper and spoon over the chops.
